Ultimate Superfood Salad
It’s finally here! Salad season.
My veggie garden is in full swing, kale is popping up snap peas are blooming and producing. This is the best part of the year, what’s for dinner ? Let’s have a peak in the garden.
This salad recipe is a fav in our house.
1 avocado(s) Avocado (pitted, peeled, sliced)
2/3 cup Blueberries
1 medium Carrots (shredded)
1 1/2 cup Kale (finely sliced, massaged with oil)
1 cup shredded Red cabbage
3 tbsp hulled Sunflower seeds
2 tbsp Dried goji berries
1/2 clove(s) Garlic (minced, for dressing)
3 tbsp Extra virgin olive oil (for dressing)
1 tsp Honey (for dressing)
1 tsp Lemon juice (for dressing)
1 pinch Sea Salt (for dressing)
1 dash Black pepper (for dressing)
1. Whisk together the oil, lemon juice, honey, and garlic, and season with salt and pepper. Set aside.
2. Place the remaining ingredients in a salad bowl. Toss with the dressing and serve immediately.
