Peanut Butter Chocolate Chip Yogurt Cookies

Ingredients

1 1/2 cup Peanut butter, smooth (creamy)

1/2 cup Greek yogurt, vanilla, fat-free (or plain Greek yogurt + 1 teaspoon vanilla extract)

1/2 cup Brown sugar (lightly packed)

2 large egg Egg

1 tsp Baking soda

1 tsp Salt (coarse)

1/2 cup Dark chocolate chips (or chucks)

1 pinch Sea Salt (for sprinkling (optional))

Instructions

  1. Preheat the oven to 350 degrees. Place a large piece of parchment paper on a baking sheet. Set aside.

  2. Whisk together peanut butter, yogurt, brown sugar, eggs, baking soda, and salt until combined. Fold in chocolate chips.

  3. Using an ice cream scoop, place dollops of cookie dough on parchment paper, leaving a ½-inch gap in between each cookie. Sprinkle each with flaky sea salt (if using). Bake for 10-15 minutes, until cookies just start to crack on the top.
