Blueberry Mango Salsa

I get a ton of questions on how I get my kids to eat “healthy” things, or why when they are hungry they reach for a banana or an apple instead of other foods. Well it's not often i buy things like chips, or candy. If you're watching tik tok I guess you would call us an ingredient house, there is tons to eat it just requires a bit of work, which is why they reach for things they can manage at 3 & 4.

Another way I get them to eat what were eating is to add stuff they like to things they normally wouldn’t eat. to get them to like brussel sprouts I added a slice of bacon while I was cooking them for the first 3-4 times. Now I cook them without and everyone still eats them. Blueberry mango salsa is another one i use on things like salmon, to get them to eat it then we do away with the salsa or only have it periodically.

I took a course that was geared for dementia patients a few years ago and the instruction had said “it takes time to make time” and I like to apply that to my kids with most aspects of their lives. In reality it does take time to make time , you spend time teaching them to brush their hair so they can do it themselves freeing some of your time up. The same goes for cooking and getting kids to try new things.

1 mango Mango (diced)

1 medium pepper(s) Red bell pepper (chopped)

3 stalk(s) Green onion (chopped)

1 medium pepper(s) Jalapeno pepper (chopped)

1/4 cup Cilantro (coriander) (chopped)

1 tbsp Lime juice (fresh) (fresh squeezed)

1 cup Blueberries (fresh)

1 pinch Sea Salt (of kosher; (optional))

** You can always skip the jalapeno pepper if you don’t like a bit of spice.

1. Toss all ingredients together in a medium-sized bowl - chopped as instructions read. 

2. Serve salsa immediately over fish or chicken on your favorite tortillas.

3. Store any extra salsa in refrigerator for up to 4 days. Flavors will build the longer the ingredients marinate together.
